�e range of botanicals used alongside
juniper can differ wildly, with Emma
Stokes, founder of World Gin Day and
author of �e Periodic Table of Cocktails,
noting: "You find gins at opposite ends of
the flavour spectrum, from those flavoured
with flowers to others flavoured with
savoury botanicals such as seaweed."
�e botanicals in newer gins frequently
draw on a sense of place. For example, Gin
Mare, hailing from outside Barcelona, is
flavoured with green olives, rosemary and
thyme, while Conker Spirit Dorset Dry
Gin is made with local spring water from
the New Forest, and infused with gorse
flowers, samphire and elderberries.
�e numbers are also important here,
and �e Travelling Gin Co's Ed Godden
says a lot of his customers show interest
in Monkey 47, a gin that hails from the
Black Forest and employs no fewer than
(you guessed it) 47 botanicals, whereas
Copperhead Gin from Belgium uses only
five classics: juniper, angelica, cardamom,
coriander seed and orange peel.
