Rupert Holloway is founder and
head conkerer of Dorset's very own gin
distillery, and he's determined to put the
county on the spirits map with Conker
Spirit's new Dorset Dry Gin.
� is small-batch premium gin, distilled
from British wheat spirit and New Forest
spring water, has been a real labour of
love for Holloway, who decided to swap
buildings for botanicals and he gave up
his job as a chartered surveyor to conquer
the unknown of distilling, and to "just
smile a little more".
DISTILLING AN IDEA
"I thought, 'Why are we spoilt for local
beers and yet when it comes to my G&T,
our choice is restricted to the industrially
distilled brands?' And so my journey to
launch Dorset's fi rst gin distillery began,"

everything ourselves, with a focus on
quality without the shortcuts. Conker
Spirit is the real deal; we are the distillers,
the bottlers, labellers and even botanical
foragers, hand-picking New Forest gorse
fl owers destined for our copper pot still!"
� e recipe for Dorset Dry Gin has been
fi ne-tuned by Holloway to compose a
fresh, intricate gin. While it is still a
proper classic gin led by an undertone
of dry Macedonian juniper, the subtle
incorporation of the Dorset notes of
elderberries, samphire and gorse fl owers
brings refreshing, lighter notes to Conker.
� is exciting freshness and a barely
perceptible alcohol bite will have you
sipping Conker just as it comes, over
ice, while for the perfect G&T its
recommended serve is with Fever-Tree
Tonic and a strip of lime peel. What's
more, it's a great ingredient for both new
and classic cocktails, including Martinis
Launched just last year, Conker's gin is
already making its mark, and is served at
Hix Restaurants as well as River Cottage
HQ , and, as of this summer, in Fortnum
& Mason stores. With such success, the
team at Conker are already looking into
increasing production, and have appointed
a coppersmiths to build a new bespoke still
in order to do just that, helping to spread
the Conker gospel even further.
Conker Spirit's trophy cabinet is fi lling
up fast, with awards including a gold at
the Taste of the West Awards 2016 , a
