A

s long-standing sponsor of

World's 50 Best Restaurants and

a promoter of emerging talent

via the inaugural Young Chef

Competition, s.pellegrino and

Acqua Panna are rmly rooted in

the world of ne dining.

While their a€ nity with great food is rmly

established, diners are less familiar with how

they can inƒ uence the palate. s.pellegrino and

Acqua Panna have been busy researching this

fascinating area, exploring the organoleptic

interaction of their waters with food and wine,

and discovering some interesting insights.

Acqua Panna, which has a smooth, velvety

character, complements lighter, fresh and

fruity whites and sparkling wines paired with

elegant, naturally ƒ avoured dishes, including

those containing salty, sour or oily elements.

s.pellegrino, with its mineral-lined, naturally

gentle e… ervescence, can take fuller-bodied

whites and complex reds in its stride, forming

an ideal partner with ƒ avoursome beef or

mature cheese, while also lifting dishes such

as creamy risotto or rich pasta.

With this in mind we explored some

sublime water, wine and food pairings at

three of London's leading restaurants…

Phil Howard, The Square

Warm salad of Lincolnshire eel with Jersey Royals, chilled cucumber

Acqua Panna, with its light, smooth and balanced style, harmonises well

with the gently integrated ƒ avours in this starter alongside an aromatic

German Riesling.

Contro letto di Manzo: chargrilled Hereford beef sirloin with a fritto

misto of violet aubergine, zucchini and globe artichokes with aged

balsamic, chilli and parsley.

s.pellegrino's excellent structure and ne mineral content pairs perfectly

with the complex ƒ avours of this main, rounded o… with a youthful Barolo.

Chris Galvin, Galvin at Windows

Dark chocolate palet d'or, raspberries and white chocolate ice cream

With this intense dessert Acqua Panna brings the ƒ avours of the chocolate

and fruit to the fore, while s.pellegrino, with its fuller style, matches the

sweetness of the dish while keeping the palate fresh. A sweet red wine

such as a Maury is superb with either.

NATURAL

LIVE IN ITALIAN, LIVE

FROM LONDON At s.pellegrino's recent pop-up, Live

in Italian, Live from London, Michelinstarred

chefs Phil Howard and

Theo Randall gave live, interactive

demonstrations on consecutive evenings

as they cooked Italian-inspired menus,

using the best of British ingredients paired

with Italian wines and s.pellegrino and

Acqua Panna waters.

The Perfect Serve

As with ne wine, quality waters are best served without ice, chilled

to an ideal temperature: s.pellegrino 8-10°C, Acqua Panna 10-12°C
