fascinating area, exploring the organoleptic
interaction of their waters with food and wine,
and discovering some interesting insights.
Acqua Panna, which has a smooth, velvety
character, complements lighter, fresh and
fruity whites and sparkling wines paired with
elegant, naturally avoured dishes, including
those containing salty, sour or oily elements.
s.pellegrino, with its mineral-lined, naturally
gentle e ervescence, can take fuller-bodied
whites and complex reds in its stride, forming
an ideal partner with avoursome beef or
mature cheese, while also lifting dishes such
as creamy risotto or rich pasta.

Dark chocolate palet d'or, raspberries and white chocolate ice cream
With this intense dessert Acqua Panna brings the avours of the chocolate
and fruit to the fore, while s.pellegrino, with its fuller style, matches the
sweetness of the dish while keeping the palate fresh. A sweet red wine
such as a Maury is superb with either.

demonstrations on consecutive evenings
as they cooked Italian-inspired menus,
using the best of British ingredients paired
with Italian wines and s.pellegrino and
Acqua Panna waters.
