Banana Milkshake
Banana and rum is a classic �avour combination. Rum
ampli�es banana �avours, because you often get banana
notes in rum. Beware - this milkshake is incredibly moreish.
225ml semi-skimmed milk
175g vanilla ice cream
150ml banana purée**
35ml Ron Zacapa 23
Glass: Milk bottle
Method: Measure the ingredients into a blender, blend for
two minutes, pour into a milk bottle and serve with a straw.
**To make the banana purée
750g bananas
250ml water
250g sugar
200g egg yolk
Bring water and sugar to the boil in a pan, add the banana,
take the pan o� the heat and leave to cool to room
temperature. Blend the mixture with the egg yolk and sieve.
TOP TIPS TO REMEMBER
Use good-quality ice creams, because
you really can taste the di�erence.
You can switch the vanilla ice cream for any
�avour you wish - go crazy experimenting.

Make sure you use homemade pancakes
in the blueberry pancake purée.
We use these exact measurements at
Barnyard to ensure consistency, but you can
be a little more lax when making yours.
Milk bottles are easy to �nd nowadays,
try Lakeland's 250ml or 500ml bottles;
If you're throwing a party, get a big blender
and multiply the quantities so that you can
bash out a few at the same time.
Blueberry Pancake
Milkshake
I love blueberry pancakes, so thought I'd experiment
with them in a drink. The fruit in this milkshake has
a lovely sharpness, while the pancakes themselves
give a pleasing starchy grain �nish to the drink,
which works really well with the bourbon.
225ml semi-skimmed milk
175g vanilla ice cream
160ml blueberry pancake purée*
35ml Woodford Reserve bourbon
1 tbsp caster sugar
Glass: Milk bottle
Method: Measure the ingredients into a blender,
blend for two minutes, pour into a milk bottle
and serve with a straw.
*To make the blueberry pancake purée
1 litre Funkin blueberry purée
150g thin pancakes
150ml water
Blend everything together and sieve.
Vanilla Milkshake
The classic. You can use this as the base when
experimenting with your own milkshake recipes.
I make it with bourbon because it works well
with vanilla �avours, but you can try di�erent
spirits if you want.
225ml semi-skimmed milk
175g vanilla ice cream
