I always look forward to the early season
asparagus, and later in the year to cooking
with mushrooms. They're my two favourite
ingredients, when they're at their peak.
The Golden Heart in Shoreditch is my favourite pub, it's got a great
atmosphere and is always a lot of fun. Tracey Emin is a regular, too.
I love eating late at night in Chinatown, it's
a real chef's hangout. And all of the Turkish
restaurants in Dalston are great, too.
Many of our suppliers have stalls in Borough
Market and I'll often go for a wander to see
what they're doing, and to get inspired by
all the other great producers that are there. My favourite co� ee is at Allpress in Shoreditch. Bar Italia in Soho
is also very good and an absolute institution. There's nothing
better than being able to get a co� ee in the middle of the night.

When cooking at home, I
always insist that there are
no more than three main
ingredients in a dish. The
same applies for most of the
food in my restaurants.
Vietnamese is one of my favourite cuisines and
I eat at Viet Grill on Kingsland Road regularly.
The � avours are really bright and authentic.
