You have plenty of options here, from
crisp whites, such as Chablis, to dry
rosé and even a light red like Pinot
Noir if your salmon comes with roast
veg. Look for a wine with light fruit
flavours that don't overpower the
delicate fish, and with fresh acidity
to contrast the soft texture of the
fillet, cleansing your palate as it goes.
BARGAIN: Le Froglet Rosé,
Languedoc, France (£7, Marks &
Spencer) Made from Syrah, Merlot
and Cabernet Sauvignon in the sunny
South of France, this rosé has nice
red fruit flavour and bright lemony
crispness. Perfect with salmon.
BEST BUY: Antea Rioja Blanco 2014,
Marqués de Caceres, Rioja, Spain
(£12.99, Majestic) This white Rioja is a
great food wine. There's some weight
to the palate, with a smoky note to
match with the roasted flavours of the
fish. Fresh, with rounded citrus notes.
BLOW-OUT: Mâcon Loché 2013,
Clos de Rocs, Burgundy, France (£17,
Selfridges) This is a clean, mineraland-citrus
style of Chardonnay. Fresh
and elegant, but with a nice juiciness
to the palate that makes a tasty match.

JOLLY GOODE SHOW
Actors Matthew Goode and Matthew Rhys have teamed up
to present a new TV series about wine. Launching in May on
ITV, e Wine Show features the duo exploring Italy.
Wine experts Joe Fattorini and Amelia Singer are on hand to
offer advice, while chefs including Francesco Mazzei and José
Pizarro will cook recipes to match their favourite wines.
Self-confessed novices Goode and Rhys hope the show will
make the world of wine more accessible. "As a new fan of wine,
I couldn't endorse it more," said Rhys. "It makes any situation
fun, although I still have no idea how it's made." We're sure
he'll figure it out over the course of the 13-part series.
