everything Callooh does, but it's backed up

by serious cocktail calibre.

which includes Bombay Sapphire, camomile

tea syrup, St-Germain, Ž no sherry and lime.

EXPERIMENTAL COCKTAIL CLUB

Like St-Germain, ECC (as it's known) hails

from France, where the original branch of

this temple to expertly crafted cocktails led

the charge in the revolution of the Paris bar

scene. Hidden away in Chinatown this is one

of Madame St-Germain's favourite hangouts,

not just because it reminds her of home, but

because the drinks are delicious, the music

swinging and the crowd is beautiful.

What to order? The St-Germain des pres,

a cocktail that combines St-Germain with

gin, cucumber, lime and chilli.

This tiny basement bar on Hoxton Square is a

major hangout for o™ -duty bartenders, which

bar can get. Achingly cool but in a laid-back,

friendly way, the list is short and sweet and

the sta™ really know their stu™ , so if you

fancy something a bit di™ erent they are

always happy to help you out.

What to order? Try the bouquet garni

cocktail, which has a herbal element from its

mix of St-Germain, poire william liqueur, lime

and a dash of homemade rosemary tincture.

NIGHTJAR

129 City Road, EC1V 1JB

Last year Nightjar was voted the second

best bar in the world, due to its elaborate

cocktails and seriously sexy subterranean

vibe, which can all be found in a thoroughly

unexpected location just o™ the Old Street

roundabout. It's pretty well hidden (look for

a brass plaque), but well worth seeking out

for its combination of live jazz and some of

the prettiest drinks in town.

What to order? Something long, refreshing

and complex: little entente is a mix of vodka,

St-Germain, lemon and a purée of grilled

Korean pears, topped with white beer.

It's a bit di™ erent from the other bars on the

list, but every now and then even Madame

St-Germain needs noisy music, a fruity

cocktail and an excuse to dance on the tables

- the sort of evening that this tiki bar will

provide every evening. With Ž re-breathing

and bartenders who welcome everyone like

an old friend, it's impossible to stay in a bad

mood once you've walked through that door.

What to order? Fun, fruity and delicious, the

shark's tooth (our way) mixes St-Germain,

Bacardi Superior, maraschino cherry liqueur,

pomegranate, lime and pineapple.
