A discreet City journey into the history of mixology
The gallery hush bar in the imposing Victorian Royal Exchange
has been relaunched by DD into a discreet cocktail bar. Find
drinks inspired by Jerry Thomas, author of indispensable 1862
mixology tome Bar-tenders Guide: £12 signatures include an
U'Luvka vodka, green tea and nettle cordial twist on Thomas'
Gin Smash. Open sandwiches and small plates provide ballast.

The Walrus Room
Is this gin-fuelled cocktail joint a cabbage or a king?
Crowd-funded on the initiative of 'City Superwoman' Nicola
Horlick, this twee gin joint is the Wonderland of her fashiondesigner
daughter, Alice. In a cod-Victorian study, there's a
soundtrack of swoony crooners, while Lewis Carroll's
The Walrus and the Carpenter is the inspiration behind the
'artisanal hedgerow cocktails' and the oysters on the menu
(lobster rolls are alternatives). The Carpenter (an Old Fashioned
with Compass Box whisky and cigar smoke infusion) and Such
A Trick (Hendrick's gin, blood orange and grapefruit sherbet,
dandelion and burdock, and sparkling Piquepoul) are dandy, but
prices are high. The bar was near empty on a Thursday evening.

JackdawFunky indie bar/café for beatniks and blues brothers
'Clapton's own Jazz Café' is a fascinating new destination
for music a cionados. The Jackdaw's plumage is a fabbyshabby
magpie mix, the feather in its cap a speakeasy-style
basement that showcases serious musicians. Soak up some
blue notes over draught craft beers, decent vino, or classic
cocktails. It's open for breakfast, weekend brunches and
lunch of soups, salads, Cuban-style sandwiches or pasta.
Come evening, the menu's 'modern British grazing' might
mean con t rabbit croquettes with Dijon mayo, followed by
grilled peaches with tahini ice cream, basil and sesame.

Shoreditch's spirited Casita has spawned a
'son of'. This blink-and-you'll-miss-it dive
occupies the basement of Turkish meze
bar Solche, sporting hippyish decor that's
big on charm. Czech beer Hobo gures on
the concise drinks list, as do Tequila shots
and cocktails of Tommy's Margarita and
Bramble - all helped down by Mexican
tapas and 70s rock and soul.
