For seafood fans, autumn means one

thing: native oysters are back in season.

During months with an 'R' in their name

it's possible to harvest these molluscs,

which spawn from May to August. There

are several classic white wine matches,

so it's time to get shucking...

BARGAIN: Gadais Père et Fils

Muscadet Sèvre-et-Maine Sur Lie

Muscadet is a traditional match for

oysters and this one is made from Melon

de Bourgogne grapes grown on France's

Atlantic coast, so you'll taste the sea air

on the clean citrus palate.

Fossilised oyster shells in the soils of

the Chablis region impart a distinctive

mineral character to its wines. This also

has great palate-cleansing freshness.

BLOW-OUT: Laurent-Perrier Ultra Brut

NV Champagne, France; £48, Majestic

Bubbles make a wonderful contrast to

the soft, slippery texture of an oyster.

This is a bone-dry style of Champagne

with mineral notes and a hint of salinity

that match oysters perfectly.

SNIFF, SWIRL AND SIP...

Hibiscus has launched a series of weekend wine tastings led by head

sommelier Bastien Ferreri and consultant Isabelle Legeron MW. Each

Saturday session has space for six people and will feature six wines paired

with canapés specially created by chef Claude Bosi and his team.

Themes for autumn include New Wave California (7 November). Tickets

cost £100 per person and must be booked in advance. Participants can

Bolney takes flight

Sussex wine producer Bolney Wine Estate's Pinot Gris

2014 has become the � rst-ever English still wine to be

listed by British Airways. It is now being served on � rst

class � ights to and from the US. Bolney winemaker

Sam Linter said, "This demonstrates the quality

reputation that British wines are now receiving."
